DS: Updated changelog for v1

This is a working PR to update the changelog for the release of the new DS.

Initial update:

• Looking at particular changes done for the DS and theming.

@akademy :

there are other things that need to be added too, outside of theming. Like new components, MUIv7, updated packages, new security checks, probably others.

Can you remove the changes to everything other than the v1.0.0 section, please.

@VictoriaBeilsten-Edmands I only realised what you mean. These changes were done automatically because of Prettier I think (replacing * with _ etc). Not sure what I can do about that

You must have a different prettier config to mine. In vscode, you can choose "save without formatting". I opened #226 with an updated changelog instead of modifying this PR.
